Weekly Menu

I can’t believe it’s Saturday again! Where did the week go? I feel like I just put together my weekly menu and grocery list for last week and it’s already time to do it again.
This week I’m trying a lot of new recipes from Skinnytaste.com If you have checked out her site, you totally should. Her recipes haven’t failed me yet! I also like that so far, I’ve been able to find them on My Fitness Pal to put in the calories.
This week we are having:
Sunday-Tacos at families (It’s family dinner Sunday and funny enough, both our families will be enjoying Tacos)
Monday- Sloppy Joes with Baked Onion Rings (Our Sloppy Joes got pushed back from last week due to an unexpected Belated Birthday Dinner with Laryssa and her Hubs.)
Tuesday- Broccoli & Cheese Stuffed Chicken with Asparagus & Rice
Wednesday- Cheesy Zucchini Enchiladas
Thursday- Spinach Manicotti (I might change this…not set on it yet)
Friday- Free Day (Just in case I don’t feel like cooking!)
Saturday- Grilled Chicken & Spinach Salad (Gotta have our salad day)
I have a few healthy desserts in mind that I’d like to try. I’ll post any of the successes. BTW, the lighter Texas Sheet Cake that we made….DELICIOUS!!!! You can find the recipe here.
What’s on your menu this week?

Red Velvet Cupcake Tips

What's the most romantic cupcake? Red velvet of course! Red velvet cake is by far my favorite one to make (and most requested). Here are a few ideas to incorporate into your own recipe to make it extra special!

*chocolate chips! A lot of people to really make the connection that red velvet is a chocolate cake, make it extra chocolaty!
*coconut flakes! I've done this and they actually compliment each other really well

*strawberry cream cheese icing!! Mmm yum!
*and my all time favorite.... NUTELLA! Add some to your icing, to your batter, or drizzle it on top. Sooo tasty!
Enjoy creating!!!

Zucchini Lasagna is…

FANTASTIC! It was supposed to be on the menu for Sunday but Sunday morning I woke up with…you guess it, the flu. You know the one I’m talking about…the nasty, chilled to the bone but still sweating, swallowing feels like your downing a 100 knives all at once, glands so swollen you can’t move your neck, ears in so much pain you want to rip them off your head, nose so stuffed that your forced to talk in that awkward nerd voice in short, interrupted sentences just so you can catch a breath, body aches so bad you just want to punch someone in the face, feverish, miserable, flu.

Because of said flu I was obviously in no mind frame to cook and there wasn’t much that sounded good, pretty much my options were macaroni and cheese or chocolate chip pancakes. I also couldn’t put all that work of making the lasagna on Mr. Awesome. Ultimately, we went with chocolate chip pancakes and the zucchini lasagna got pushed back till today.

It was worth it though. I still feel pretty miserable but at least the fever has broken and I think I was able to enjoy it more today than if we had had it yesterday.

So with Mr. Awesome and mine’s stamp of approval, we say go make the zucchini lasagna! We think you’ll like it.
*We followed the recipe pretty exact with the exception of swapping the ricotta cheese for cottage cheese.*

You can also look forward to a post about a natural cleaning solution since I’m in the process of cleaning everything in hopes that Mr. Awesome doesn’t get sick.

The Week’s Menu

Today is planning and shopping day. It’s the day to plan next weeks menu, put the shopping list together, and head out into the cold rain.

I thought I’d share the menu for the next week. Most of our dinners are going to be new recipes, found on Pinterest. Let’s hope they taste good. They are also supposed to be healthy which is great because we have been making such a great effort to eat healthy and exercise.

*Brag Moment* For 3 weeks in a row, I’ve hit my goal of going to the gym at least 5 days. WooWooo! I’m also down 12 pounds. Can I get another WooWoo?!? Okay, brag moment over.

If you are new to us, you can find my menu board here.SONY DSC So here is this weeks menu with links to the recipes if you’re interested.

Sunday: Zucchini Lasagna
Monday: Stuffed Bell Peppers with Quinoa, Spinach and Feta Cheese

A Taste of Summer

So I hate to admit this… but here it goes... ok, are you ready… it’s shocking… I MISS SUMMER! Living in Arizona I honestly never thought I would say that, I kind of hate the 115 degree weather, the blazing sun, the driving around with hot pads on your hands because the steering wheel burns you, etc. But these past few days it has been really cold, and I don’t like it; do you even understand how hard it is to enjoy Bahama Bucks (Shaved Ice) when its below 30 out?!? Slightly harder, but still do-able.
downloadThis is a moving fountain…. It is not suppose to be frozen solid in Arizona… ever.
Anyway, today’s post is a tribute to one of the most amazing, funny, beautiful, sweet, caring, optimistic, devoted and somewhat odd, person that I know, a one and only Mrs. Martha Leah Packard, Jen and I’s grandmother. Now, if there is one thing in the word that Jen and I can agree on (O come on, we agree on a lot!) it is that we love our Grandmother she (along with our Mothers) taught us all about DIY, saving, cooking, baking, sewing, antiquing, collecting, preserving, thrift shopping etc. Lets just say we owe her one… or like a billon, but who’s keeping track.

grandma 1  grandma 2
Our beautiful and amazing grandma, our handsome grandpa, Jen and Myself.
One of my personal favorite memories of grandma was going to her house on a hot summer day, cheeks red, a little sweaty and out of breath from running to her house on my lunch break from school and her digging in the freezer through all the many flavor of ice cream (definitely know where my mother gets her ice cream habits) and pulling out a “Homemade” Ice cream Sandwich. Can you say mmmmmmmm.  Now they weren’t always homemade but they will always be homemade to her grandkids.Image (3)It was no surprise when I was feeling a little nostalgic the other day that I called Jen up immediately and said, “ I need one of grandma’s ice cream sandwiches” She agreed. Grandma definitely had the right idea, she would always make them ahead of time so she could more or less throw them at us when we were late and running out the door to some kind of activity. A cool refreshing, ready to go, exciting special treat for the little ones.
Since this is sooo incredibly easy I’ll spare you my ranting and just chalk it up with a few pictures.
ImageImage (1)Image (2)The only thing I suggest besides the obvious is to let set in the freezer a little bit before serving, and store in an air tight container or wrap in some plastic wrap to keep as a quick sweet treat.
Be Blissful!

BBQ Chicken Salad....Yes PLEASE!

For this post you will need your grocery list and a pen handy because by the time I am done sharing this incredible recipe, you should be scrambling to get yourself out the door and over to the grocery store so that you can get the stuff needed to have this salad TONIGHT!
I wish I could take the credit for this deliciousness but the credit belongs to my wonderful sister-in-law, Stephanie. Mr.. Awesome and I are forever indebted to you, Steph, for introducing us to this salad, and soon, you will all be indebted to me since I am bringing it to you! (insert evil laugh here) But in all seriousness, feel free to flood my inbox with emails of gratitude and life changing experiences because of this salad. Who knew a salad could be life changing!
*These are our edits and thoughts to the recipe* Ready for the recipe? I know your just so uber excited!
First things first, let’s get our chicken marinating…
BBQ Chicken:
1 hour before, marinate 2 pounds chicken tenders in 1/4 cup olive oil, 1/4 cup soy sauce, 1 tsp minced garlic, 1/2 tsp salt & pepper.
*We honestly don’t measure the salt and pepper and we use a dash of garlic powder and sometimes a dash of onion powder*SONY DSCWhile the chicken is marinating, I suggest we get the dressing made.
In a blender, combine:
1 cup buttermilk *if you don’t have buttermilk, you can use a cup of milk and 1 Tablespoon white vinegar or lemon juice*
1 cup mayo *we have also used miracle whip and it works just fine*
1 package Hidden Valley ranch mix
SONY DSC
Add in 1/4 cup Cilantro dicedSONY DSCSONY DSCBlend until mixed well.
*We always stick it in the fridge after we bled it together, it thickens it up a bit and we like it that way*SONY DSC After an hour, place the chicken in your pan and put it in the oven on Broil (high) *We opt for a glass baking pan and choose to line it with tin foil for an easier clean up* The recipe doesn’t say this but I cover the chicken in the pan with the marinade* SONY DSC Broil 8-10 minutes per side, depending on the thickness of the chicken. Let cool then dice in cubes, then toss with 1/2 cup BBQ sauce of your choice! *We also don’t measure the BBQ sauce, just coat it to our likingSONY DSCThe rest is easy peasy, just a tad time consuming (but totally worth it!)
1/2 head iceberg lettuce - chopped
romaine lettuce- chopped
1 cup frozen white corn- rinse under cold water, or fresh corn if in season
1 can black beans- drain & rinse
2 cups pepper jack cheese, shredded
2 medium tomatoes, diced
1-2 avocados, chunked- drizzle 1/2 lime over to prevent from browning
*We opt to just do romaine. We also add chopped bell peppers which we really like (maybe 1-2 decent sized peppers) and we top it all with some sunflower nuts*

On a large platter, layer lettuce, corn, black beans, *peppers*, cheese & tomatoes. Top with warm BBQ chicken and avocados *and sunflower nuts* Enjoy! *You can also do buffet style which is what we always do*
SONY DSC SONY DSCDoesn’t it sound and look so delicious?!? I know you are so anxious to get to the store and get the ingredients you need to make this tonight so here is the recipe in full.
